In commemoration of those that have served and are still serving in the armed forces, this weekend will be filled with memorials and cookouts. Memorial Day weekend often kicks off many summer staples like ice cream season. For your weekend celebration here is a delicious, and patriotically-themed dessert to try: Red Velvet Ice Cream Sandwiches.

What you’ll need:

Steps

  1. Pour cake mix into a medium-sized mixing bowl.
  2. Stir in butter and eggs, beaten.
  3. Once mixture is relatively combined, mix on low speed for 1-2 minutes or until completely mixed.
  4. Preheat oven to 350 degrees Fahrenheit.
  5. Place mix onto a non-stick baking sheet in one inch balls.
  6. Bake cookies in the oven for 12-13 minutes or until cooked fully.
  7. Let cookies sit for 30 minutes to an hour until cool.
  8. Spoon vanilla ice cream onto cooled cookie and sandwich between another cookie.
  9. Serve right after or store in freezer for later.
These ice cream sandwiches are great for Memorial Day and also Independence Day celebrations!
