Cinco de Mayo Ice Cream

Cinco de Mayo, also know as the fifth of May, is considered a fairly minor holiday in Mexico in terms of celebration. The holiday commemorates the 1862 Mexican victory over the French army at the Battle of Puebla. Many had expected the French overhaul of Mexico to be swift and quick but the victorious battle surprised the French and boosted the morale of Mexican forces and people. Today, Cinco de Mayo is more of a celebration of Mexican culture and heritage with food being one of the main features. One of our favorite dessert dishes is Mexican Ice Cream. It is simple to make and tastes delicious! Find the recipe below:

What you’ll need:

  • Vanilla ice cream
  • 1/2 cup crushed cornflakes
  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup honey
  • Ice Cream Scooper
  • Wax Paper

Steps:

  1. Line a baking sheet with wax paper.
  2. Put individual scoops of vanilla ice cream on the wax paper. Each scoop should form a small round ball shape.
  3. Once you have enough scoops for your dessert freeze the ice cream for at least an hour.
  4. Take your cornflakes and if not crushed already, place them in a resealable plastic bag and crush them into fine pieces.
  5. After the ice cream has been frozen for an hour, remove from freezer.
  6. In a small bowl mix crushed cornflakes, sugar, cinnamon, and honey.
  7. Roll the ice cream in the mixture until completely covered and place in serving bowls.

How to Make Ice Cream Easter Eggs

This weekend is Easter which means lots of candy, eggs, and fun! One of our favorite Easter treats is some homemade ice cream Easter eggs. These colorful treats are festive and fairly simple. Follow the recipe below to make your very own ice cream eggs this Easter Sunday!

Ice Cream Easter Eggs

Supplies

  • Vanilla ice cream (or ice cream of your choice)
  • Egg molds
  • Bamboo skewers (popsicle sticks work too)
  • Candy pieces or sprinkles
  • Chocolate (optional)

Directions

  1. Spoon softened vanilla ice cream into the both sides of the egg molds, flattening the tops with the back of the spoon.
  2. Press together both sides of the egg molds together.
  3. Take the bamboo skewers or sticks and push them through the two egg molds so that they are stick in the eggs like lollipops.
  4. Place the molds with skewers in the freezer and let sit for two hours.
  5. Remove molds from freezer and place molds in warm water for easy removal.
  6. Pour sprinkles or crushed candy pieces into a bowl to roll eggs until they are covered, then serve.
  7. We liked to cover the eggs in chocolate and candy pieces. If you’d like to try this twist on the recipe, you’ll need to melt your chocolate and pour it into another bowl.
  8. First, dip the eggs in the chocolate and roll it in the candy pieces. You’ll need to freeze these for at least an hour and then serve!

We don’t recommend using these eggs in your Easter egg hunt because who wants melted ice cream? However we definitely recommend treating yourself or the kiddos to one of these delicious eggs after a long, rewarding day of egg hunting! Robin’s Egg Milkshakes for Easter

Egg hunts, colorful candy, and spring weather are just a few of the signs that Easter is near. With all this sunshine and warm weather, we can't help but celebrate with one of our favorite ice cream creations, Robin's Egg Candy Milkshakes!

What you’ll need:

Malted easter egg candies
¼ to ½ cup milk
Ice

Directions

  1. Scoop soft vanilla ice cream into a blender.
  2. Pour in ¼ to ½ cup milk. Adjust how much milk you used based on if you prefer thick or thin milkshake consistency. Use less milk if you like thicker milkshakes.
  3. Next add a few ice cubes and about ¼ cup of robin’s egg candies.
  4. Place the lid on the blender and blend on high speed for 1-2 minutes or until all the ice is crushed.
  5. Pour the milkshake into a drinking glass. You can add whipped cream or other toppings as desired.
  6. To be even more festive, top it with a few robin’s eggs. You can leave the eggs whole or place them in a resealable plastic bag and crush them into smaller pieces. We also like to top it with some hot fudge for extra chocolate goodness!

Ice Cream Pizza

Now you can have pizza for dinner and dessert! Ice Cream Pizza has the best of both worlds and it is quick and easy to make. Here’s how you can make it:

What you’ll need:

Instructions:

  1. Preheat oven to 350 degrees.
  2. Press chocolate chip cookie dough into a round baking pan so that it forms a pie-like shape.
  3. Place in the oven for about 20 minutes or until cookie is fully cooked.
  4. Let cool for about 30 minutes.
  5. Scoop soft vanilla ice cream into baked cookie.
  6. Cut pie into slices but do not separate them yet.
  7. Cover and place ice cream pizza in the freezer for an hour.
  8. Remove from freezer and serve!
