Rice Krispie Ice Cream



What is this? It looks delicious.

Some of us have fond memories of making homemade Rice Krispie treats when we were younger. Here’s a neat twist on that recipe. It will make about 18 servings, so be sure to make it for a party or gathering. For the gallon of ice cream necessary, try some of our hand-dipped flavors.

[…My sister] walked in the door with this incredible dessert, and after one bite I was sold! It is fabulous. No white flour and STILL absolutely delicious. Granted it uses Rice Krispies and I already loved those, but it made me realize that there are a lot of options out there that can still make your food delicious without compromising on flavor! 
It tastes like fried ice cream to me, but SO much easier! No frying or baking required! This dessert is super easy to make for a crowd and will leave them raving about it!
 INGREDIENTS
  • 3/4 cup butter softened
  • 1 1/2 cup brown sugar
  • 3 3/4 cups Rice Krispies cereal
  • 1/2 gallon vanilla ice cream softned to a workable temperature
  •  favorite ice cream toppings optional
 INSTRUCTIONS
  • In a large bowl, mix softened butter, brown sugar and Rice Krispies cereal together.
  • Spread 1/2 of the Rice Krispies mixture evenly on the bottom of a greased 9x13 pan.
  • Smash a layer of vanilla ice cream over the top of Rice Krispie layer until evenly distributed and as flat as possible.
  • Sprinkle remaining 1/2 of the Rice Krispies mixture over the top of ice cream layer.
  • Freeze until set up and ready to serve.
  • When ready to serve, remove from freezer and cut into squares. You can serve it topped with your favorite ice cream flavors or just as is. Either way is delicious!
