Cinco de Mayo, also know as the fifth of May, is considered a fairly minor holiday in Mexico in terms of celebration. The holiday commemorates the 1862 Mexican victory over the French army at the Battle of Puebla. Many had expected the French overhaul of Mexico to be swift and quick but the victorious battle surprised the French and boosted the morale of Mexican forces and people. Today, Cinco de Mayo is more of a celebration of Mexican culture and heritage with food being one of the main features. One of our favorite dessert dishes is Mexican Ice Cream. It is simple to make and tastes delicious! Find the recipe below:

What you’ll need:
- Vanilla ice cream
- 1/2 cup crushed cornflakes
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 1/4 cup honey
- Ice Cream Scooper
- Wax Paper
Steps:
- Line a baking sheet with wax paper.
- Put individual scoops of vanilla ice cream on the wax paper. Each scoop should form a small round ball shape.
- Once you have enough scoops for your dessert freeze the ice cream for at least an hour.
- Take your cornflakes and if not crushed already, place them in a resealable plastic bag and crush them into fine pieces.
- After the ice cream has been frozen for an hour, remove from freezer.
- In a small bowl mix crushed cornflakes, sugar, cinnamon, and honey.
- Roll the ice cream in the mixture until completely covered and place in serving bowls.
