Ice Cream Flavors that Remind Us of Summer

Heat waves like the one this week probably make us think of summer. For those of us who like ice cream so much, that's not a bad thing. A stifling humid day isn't complete without at least one bowl of ice cream in the evening. We have many flavors that would be perfect for those evenings, but we also wonder what flavors make us think of summer in general. Not just vanilla or chocolate, but blackberry and watermelon and lemonade.

We may not have lemonade on this list (save it for gelato), but here are a handful of others that will make you salivate and dream of summer.

Ice Cream Peanut Butter Cups



Oh, peanut butter… the oft-ignored condiment that makes ice cream even better, especially chocolate ice cream. If crumbled peanut butter cups atop ice cream wasn’t delicious enough, how about ice cream that imitates those cups? Yup, that’s right. If you’re salivating as much as we are and want something a little more than our Cow Prints or Over the Moooon, try this recipe. And perhaps you could even use our Cow Prints ice cream in this recipe!

The chocolate and peanut butter combo make this ice cream cupcake recipe a keeper! If you love Reese’s peanut butter cups you’ll love this recipe. The cake layer is filled with Reese’s peanut butter chips, giving you a sweet peanut buttery flavor in every bite. The ice cream layer is Peanut Butter Cup ice cream. Here’s the twist on the topping… it’s the new Cool Whip Frosting topped with a mini Reese’s cup. The Cool Whip frosting is a smooth frosting that compliments the ice cream nicely. 
Ingredients
  • Peanut Butter Cup Ice Cream
  • Favorite chocolate cake mix
  • 1/2 cup Reese's peanut butter chips
  • Cool Whip chocolate frosting
  • Mini Reese's peanut butter cups 
Instructions
  1. Preheat oven to 350 degrees and line muffin pan with cupcake liners.
  2. Prepare cake mix and stir in Reese's peanut butter chips.
  3. Pour 1 tablespoon of cake mix batter into each muffin cup.
  4. Bake for 10-12 minutes; allow cupcakes to cool.
  5. Top cupcakes with slightly melted ice cream.
  6. Freeze for at least 2-3 hours, preferably overnight.
  7. Top with Cool Whip frosting and mini Reese's peanut butter cup.

Rice Krispie Ice Cream



What is this? It looks delicious.

Some of us have fond memories of making homemade Rice Krispie treats when we were younger. Here’s a neat twist on that recipe. It will make about 18 servings, so be sure to make it for a party or gathering. For the gallon of ice cream necessary, try some of our hand-dipped flavors.

[…My sister] walked in the door with this incredible dessert, and after one bite I was sold! It is fabulous. No white flour and STILL absolutely delicious. Granted it uses Rice Krispies and I already loved those, but it made me realize that there are a lot of options out there that can still make your food delicious without compromising on flavor! 
It tastes like fried ice cream to me, but SO much easier! No frying or baking required! This dessert is super easy to make for a crowd and will leave them raving about it!
 INGREDIENTS
  • 3/4 cup butter softened
  • 1 1/2 cup brown sugar
  • 3 3/4 cups Rice Krispies cereal
  • 1/2 gallon vanilla ice cream softned to a workable temperature
  •  favorite ice cream toppings optional
 INSTRUCTIONS
  • In a large bowl, mix softened butter, brown sugar and Rice Krispies cereal together.
  • Spread 1/2 of the Rice Krispies mixture evenly on the bottom of a greased 9x13 pan.
  • Smash a layer of vanilla ice cream over the top of Rice Krispie layer until evenly distributed and as flat as possible.
  • Sprinkle remaining 1/2 of the Rice Krispies mixture over the top of ice cream layer.
  • Freeze until set up and ready to serve.
  • When ready to serve, remove from freezer and cut into squares. You can serve it topped with your favorite ice cream flavors or just as is. Either way is delicious!

Homemade Werther's Original Ice Cream Sauce



Here’s something a little different! Instead of a recipe for ice cream, here’s a recipe for a topping!

How many of you grew up with Werther’s Original caramel? Maybe your grandparent gave some to you during a visit, or maybe you’ve had a glass bowl filled with the stuff since you were a kid. Either way, most of us are probably already salivating just from the name. Now imagine a caramel/butterscotch sauce that tastes just like those little candies. Delicious.


Ingredients
  • (1) 2.75 oz. bag of crushed Sugar Free Werther’s Hard Candies (I used the Original flavor, but feel free to experiment using the other flavors. i.e. Caramel Coffee, Caramel Apple, Caramel Cinnamon)
  • (1) Half Pint carton of heavy whipping cream
Instructions
  • Pour whipping cream in small saucepan. 
  • On medium/low heat, heat whipping cream for 5-7 minutes.
  • Once visibly hot, add in crushed pieces of Werther’s candies.
  • Using a whisk, stir until all candy is melted. (If mixture begins to lightly boil, turn down heat and continue to stir.)
  • Once all candy is melted and mixture is smooth, remove from heat. 
  • Cool in pan for 10-15 minutes. 
  • Once cooled, pour into glass bowl and refrigerate until chilled.
